整體來說,吃過了NoMad / Amber / Lo'sier 尤其是 Hero (special editioon)... 等等法菜後,對French Fusion很多元素實在沒有什麼supprise,而一些手法都在別處吃過,所以整餐下來發現Chef很愛把細節東藏西躲的,滿有趣,也需要好好認真吃的一餐。最後的巧克力完全交待了chef最愛的表達...texture and taste,也完整的呼應了甜菜那一道。

這一道在別的地方也吃過類似的組合,所以好吃!! 但沒有意外的感覺
